This was super easy to make and yummy! You can cook the most of it while you are running errands or at work.
I placed 1 large chicken breast in the bottom of the crock pot. I then topped it with 1 can of rotel, 1 can of corn (drained), 1 can of diced green chilies and 1/2 cup of salsa. Cook on low for 6-8 hours or high for 4-5.
Next, either shred up your chicken or dice it up by removing it from the mixture. I chose to dice mine. I added it back to in after it was cubed.
Next, grease a 9x13 dish and tear up 3-4 corn tortillas and place on the bottom. Then top it with half of the crock pot mixture. Add shredded cheese and repeat the step again.
Last add more shredded corn tortillas and another 1/2 cup of salsa on top. Spread the salsa out evenly. Add some more cheese. Cover with foil and bake on 350 for 20 minutes or until bubbly.

Chicken Broccoli Rice and Cheese Casserole (Crock pot)
I was craving broccoli and cheese soup, but wanted to make something with chicken so decided to give this a try. It turned out great!
First, dice up a lb of raw chicken and place in the bottom of your crock pot.
Next top with fresh or frozen broccoli. I recommend fresh always!
Then add in approximately 2 cups of cooked rice, yes cooked! You can do the 10 minute bags of rice to save time, but definitely cook it prior. Then add 2 cans of low sodium cheddar cheese and a 15 oz can of evaporated milk. If you rather you can sub 8 oz of velveeta for the 2 cans of cheddar cheese.
Last top with 1 cup of shredded cheese, a little more if you desire extra cheesiness!
Cook on low for 6-7 hours or high for 5. Just make sure the chicken is cooked through.

Messless BBQ Manwiches
Wanted to try something fun and easy tonight so I decided to go with a less traditional manwich.
First I grounded a pound of hamburger meat along with a diced onion.
Next add about 1/4 cup of BBQ sauce and 1/4 cup of ketchup. I know it sounds like a weird combination, but its the perfect mixture. I am bad at measuring so I just squeezed in and stirred and did a taste test. A tip for those that like spice, I'd recommend adding diced jalapenos to this. I didn't want to this time because I knew it would be too spicy for the kids.

Next I whisked and egg and added some egg wash to the top of each along with some shredded cheese.
Bake on 375 for 15-17 minutes or until the top is golden brown. Husband and kid approved ;-)

8 ct canned biscuits
cheese
bbq sauce
ketchup

1 egg for egg wash

Cheesy King Ranch Chicken Soup (crock pot)
It is rainy and cold out and to me that always is a good day to make something warm. This turned out much better than I had hoped.
First dice up 1 lb of uncooked chicken.
Next add a can of cream of chicken, a can of campbells cheddar cheese soup, 1 can of rotel (do not drain juices), 1 can of corn (do not drain juices) and 1 can of diced green chilies (do not drain juices).
Next add 1 15 oz can of evaporated milk.
Now for the cheesy cheese! I put in 1 cup of colby jack and 1 cup of pepper jack. Any cheese will do. Cook on low for 6 hours or high for 4.
When you put in the bowl top with a shredded corn tortilla or corn tortilla chips (fritos). I topped with some more cheese too.

Definitely not on the low cal, clean list, but great for a cheat night especially when you need something hearty and easy.
First grease a 9 x 13 and tear up 4-5 corn tortillas.
Next add cooked chicken, 1 can of low sodium cream of chicken, 1 can of low sodium cheddar cheese, 1 can of evaporated milk, 1 can of rotel (drained juices), 1 diced bell pepper and 1 small diced onion. Mix well.
Then pour half of the mixture on top of the corn tortillas. Repeat step with the corn tortillas and mixture.
Then add 1 cup of shredded mexican cheese and cilantro for garnish if preferred.
Add foil and bake on 350 for 45 minutes.

Italian Chicken Bake
This was really fun to make and tasted great!
First add diced cooked chicken to a bowl.
Next add low fat ricotta cheese (15 oz container). Add 1/2 cup of artichoke hearts, 1/2 cup of sun dried tomatoes, 1 can of petite diced tomatoes (drain juice), 1 tablespoon of oregano and mix well. I understand this doesn't look appetizing, but trust me its amazing!
Then add evenly to the bottom of a greased 9x13 pan.
Next top with some fresh spinach and a jar of marinara. I chose a creamy garlic flavor sauce.
Next add shredded mozzarella cheese and sprinkle with italian breadcrumbs. Cover with foil and bake for 45 minutes on 350.
So yummy! Serve with garlic bread or salad.

Taco Shell Tuesday
I decided to do a different swing to Taco Tuesday. I decided to do Chicken Taco Stuffed Shells.
First I cooked my chicken in a crock pot with 1 cup of salsa. I use my homemade salsa which you can find on my blog or you can use your favorite salsa.
Once the chicken is cooked remove from the crock pot and cut or shred. I cut it up, but it ended up shredding quite a bit on its own. You can cook the chicken while you are at work hence why I used the crock pot. If you rather bake the chicken or pan cook it that is fine too.
Then I added 1 can of low sodium cheddar cheese, 1/2 cup salsa, 1 can green chilies (drained), 1 can of rotel (drained) and taco seasoning. Stir well. In the mean time you want to boil your large shells in a pot. Drain them to prepare the stuff them.
Next I pulled out a large baking pan. Instead of greasing it I added some salsa to the bottom of the pan and covered the entire pan.
Then using a spoon begin stuffing your shells. Top with shredded cheese. I chose pepper jack, but whatever cheese you like is great.
Bake on 375 for 15 minutes and then you are done.
