Cheesy Chicken Tortellini Alfredo

This was amazing and fun to make!

First add 2 bags of tortellini to water and boil. They will float at the top when they are done. Drain the water and return to the pot. Add 8 oz of cream cheese, 1 jar of alfredo sauce, 1 package of chopped broccoli and 1/4 cup of milk. Stir well.



Then add 1 lb of cooked diced chicken. Add Italian seasoning to taste. Add 1 cup of mozzarella and stir again. Voila! Easy and yummy!


Ingredients:
1 lb cooked chicken
1 10 oz package chopped broccoli
1 cup mozzarella cheese
1 jar alfredo sauce
1 8 oz cream cheese
2 bags tortellini
seasonings to taste
1/4 cup milk

Taco Nacho Bake

Here is a twist to your Taco Tuesday meal. The whole family loved it.

First I grounded a pound of beef, 1 diced onion and 1 diced bell pepper and cooked until done. (Drain grease)


Once it was cooked through I added taco seasoning and tomato sauce.


 Next in a small pot I combined Campbell's cheddar cheese, a can of rotel and a can of evaporated milk. Cook until melted and stir occasionally.


In a 9 x 13 dish add a bag of Nacho cheese Dorritos.

Next, top with your meat mixture, then the melted cheese. Add cilantro and shredded
cheddar cheese on top.


Bake on 350 for 20 minutes.


Ingredients:
1 lb lean beef
1 onion
1 bell pepper
1 can tomato sauce
taco seasoning
cilantro to taste
shredded cheese
cream of cheddar cheese
rotel
evaporated milk
nacho cheese dorritos

Million Dollar Spaghetti

Oh boy was this tasty! Healthy, of course not, but tasty absolutely!

First cook 1 pound of ground beef or italian sausage if you prefer. While that is cooking boil your noodles. I used fettuccine instead of the thin spaghetti based on personal prefernce.

When the meat is cooked set off to the side. Drain your pasta and return to the pot. Add 1 tablespoon butter, 1/4 cup Parmesan cheese, 1 can of diced tomatoes (drained) and 1 jar of pasta sauce. Mix well.

Then place half the pasta on the bottom and add cream cheese. I diced mine up in cubes.


Next top with your meat.


Add the rest of your pasta and shredded mozzarella and bake for 20 minutes on 375.

1 package of pasta of choice
8 oz cream cheese
1 tablespoon butter
1/4 cup parmasan
1 cup mozzarella
can of diced tomatoes
jar of marinara

Cheesy Broccoli and Chicken Casserole (5 Ingredients)

This is a whole new twist on the typical Thanksgiving broccoli, rice and cheese casserole that every one loves. This tasted incredible and was very yummy.

First I diced up 1.5 lbs of raw chicken and placed in my greased casserole dish. Then I topped it with fresh broccoli. I should have added more broccoli than I did, but it was all I had. Frozen broccoli and pre cooked chicken should work okay.



Next I poured 2 cans of Campbell's reduced fat broccoli and cheese soup on top of the broccoli and chicken. Then cover with foil and put in the oven on 400 for 45 minutes.


While this is cooking I boiled 2 cups of rice. When the timer goes off for the 45 minutes add the cooked rice to the meal and 1 cup of shredded cheddar cheese. Stir well. Put back in the oven and bake for 15 more minutes with the foil on top. Voila! There you have it.


Ingredients:
Chicken
Broccoli florets
rice
2 cans Campbell's broccoli and cheese soup
1 cup shredded cheddar cheese

Salsa Chicken Casserole

This was super easy to make and yummy! You can cook the most of it while you are running errands or at work.

I placed 1 large chicken breast in the bottom of the crock pot. I then topped it with 1 can of rotel, 1 can of corn (drained), 1 can of diced green chilies and 1/2 cup of salsa. Cook on low for 6-8 hours or high for 4-5.

 Next, either shred up your chicken or dice it up by removing it from the mixture. I chose to dice mine. I added it back to in after it was cubed.


Next, grease a 9x13 dish and tear up 3-4 corn tortillas and place on the bottom. Then top it with half of the crock pot mixture. Add shredded cheese and repeat the step again. 

 Last add more shredded corn tortillas and another 1/2 cup of salsa on top. Spread the salsa out evenly. Add some more cheese. Cover with foil and bake on 350 for 20 minutes or until bubbly.



Ingredients:
chicken breast
green chilies
rotel
corn
salsa
(black beans would be a good add in)
10-15 corn tortillas
shredded cheese

Chicken Broccoli Rice and Cheese Casserole (Crock pot)

I was craving broccoli and cheese soup, but wanted to make something with chicken so decided to give this a try. It turned out great!

First, dice up a lb of raw chicken and place in the bottom of your crock pot.

 Next top with fresh or frozen broccoli. I recommend fresh always!

 Then add in approximately 2 cups of cooked rice, yes cooked! You can do the 10 minute bags of rice to save time, but definitely cook it prior. Then add 2 cans of low sodium cheddar cheese and a 15 oz can of evaporated milk. If you rather you can sub 8 oz of velveeta for the 2 cans of cheddar cheese.


Last top with 1 cup of shredded cheese, a little more if you desire extra cheesiness!

 Cook on low for 6-7 hours or high for 5. Just make sure the chicken is cooked through.

Chicken
Broccoli fresh or frozen (about 10-12 oz)
2 cups cooked rice
2 cans low sodium cheddar cheese
1 can evaporated milk
1-2 cups shredded cheese

Messless BBQ Manwiches

Wanted to try something fun and easy tonight so I decided to go with a less traditional manwich.

First I grounded a pound of hamburger meat along with a diced onion.

 Next add about 1/4 cup of BBQ sauce and 1/4 cup of ketchup. I know it sounds like a weird combination, but its the perfect mixture. I am bad at measuring so I just squeezed in and stirred and did a taste test. A tip for those that like spice, I'd recommend adding diced jalapenos to this. I didn't want to this time because I knew it would be too spicy for the kids.


 Next use a container of biscuits (8 count). Press them down to make them larger and then add your mixture on top and a slice of cheese or some shredded cheese.
Fold carefully and place on a greased pan
.

Next I whisked and egg and added some egg wash to the top of each along with some shredded cheese. 
 Bake on 375 for 15-17 minutes or until the top is golden brown. Husband and kid approved ;-)
