Croissant Breakfast Casserole

For this weeks breakfast I decided to try something new. I got the pillsbury reduced fat croissant and laid it on the bottom of a 9x13 greased pan. I then spread a little bit of low fat cream cheese on top because I love cream cheese. I then grounded up some breakfast sausage and added to the top.

I whisked together 8 eggs and added a cup of milk, some spinach, tomato and green chilis. Remember when you are making breakfast casseroles you can add or leave out veggies you don't like. If you like mushrooms add them. If you don't like green chilis remove them. I just usually put in things that are in my fridge. You have plenty of options when it comes to what you want to add in or remove.
Once the eggs are whisked together I then poured this on top of the croissant and sausage. I added some shredded cheddar cheese on top and baked it on 375 for about 35 minutes. Everyone's oven is different so when you see things turning a golden brown that's usually a sign it is finished. Now I don't have to worry about cooking breakfast for the next few days. Serve with some fruit or a glass of OJ. Enjoy!

Homemade Pizza

So often when I have company my friends request I make my homemade pizzas. I'd say its one of my specialties. Who doesn't like pizza anyways?! Well I never share my "secret" to how I make my crusts. Well keep reading because I am about to give it away to you. It is such a simple item anyways and only costs 50 cents folks! Great Value Pizza Crust Mix. There you have it. All you have to do is follow the directions. To make two large pizzas I buy 5 crusts and mix them all together. I use my kitchen aid to stir it, but if you don't have one you can mix it up with your hands.
Another thing you need to remember when making homemade pizzas that will help make it taste better is using fresh ingredients. Instead of using chicken out of a bag from the deli section use real chicken. Yes, it is more work to bake it or grill it, but it makes the pizza taste so much better. Tonight I am making chicken alfredo pizza with FRESH spinach and pepperoni and sausage. Here they are ready to go and in the oven. I usually bake 10-15 minutes then rotate. Just check them periodically and when the crust and cheese starts to brown a bit then you are done. =) Enjoy.
Ingredients:
Pizza value crust (5)
alfredo sauce
pasta sauce
chicken
spinach
pepperoni
sausage
4 cups of mozzarella
**you can change your toppings out so above are the ingredients I used for these pizzas

Sausage and Pepperoni Tater Tot Casserole

Last nights dinner was one of those meals that I whipped together based off what was in my pantry and fridge. I can say that this may not suit everyone's fancy, but it ended up tasting way better than I could have imagined it would. Also, the kids quite enjoyed it as well.

I started off with a bag of tater tots. I put them in a large bowl then added a can of cream of mushroom, a cup of cheddar cheese and a can of rotel (drained) then mixed that all together.
I then diced up some kielbasa sausage and approximately 15 pepperonis and then added that to the mix. Sounds strange I know, but I didn't have any hamburger meat so thought I'd give it a shot. I then greased a 9x13 dish and put the mixture in the dish. Of course you can't forget to add more cheese on top. Everything tastes better with cheese!!! I  baked it on 400 for about 25 minutes until the tater tots were starting to brown. Then there you have it! Sausage and pepperoni tater tot casserole. It actually was quite amazing! It may not sound that appetizing, but it was a hit.

Philly Stuffed Poblano Peppers

Tonight's dish is just what the title says. The prep time is maybe 15 minutes and then about 15 minutes in the oven.

First you want to get your philly meat started. Dice up roast beef deli meat, add onion, mushrooms and green chilis if you like them and saute' them together.
Then you will get a poblano pepper. Now let me say for those that don't like spicy food you can use a bell pepper instead. I decided to try it with a poblano today because we like spicy food. The best way to deseed a pepper is to cut off the top.
Then you will cut it in half and remove whatever seeds are remaining. If you leave seeds it will make it extra hot which I don't prefer. Then you want to boil them in water for 3-5 minutes to soften them up a bit.
Once that is all done it is time to stuff them. I add the philly mixture then added some pepperjack cheese on top. If you prefer another type of cheese go for it. One thing fun about cooking is making it to fit your taste buds. The reason I make this philly without the bread is to cut out unnecessary carbs. If you wanted you could make this without the peppers and just sub some hoagie rolls. Now its time to put these bad boys in the oven. Try 375 for about 15 minutes. Enjoy!

Sunday dinner fit for a champion

I am trying a new dinner tonight. I wanted something fresh and hearty. I am not quite sure what to call this, but we will call it a sausage veggie hash.

I diced up some kielbasa sausage first. I peeled and diced two potatoes. I diced up a bell pepper, an onion, a green chili, and a tomato. I added all of this to a large pan. I also added some frozen corn to the mix for some color. I added 2 tablespoons of siracha (definitely optional) and 2 table spoons of bbq sauce for added flavor. I then cooked this on a medium heat until everything was cooked through. Once it was done I added 1 cup of shredded cheese to the top and mixed it well together. Holy Yum! I am serving salads with it on the side.

What's for breakfast?

I usually try to meal prep something for breakfast for the week so Matt can take it to work and I can feed myself and the kids. Today I'm trying something new. I'm using my crock pot to make breakfast for the first time. Here are the ingredients I used for this weeks breakfast.
First you want to cook your sausage and drain out the grease. Then I used my handy chopper to chop up the green chili and tomato. I then layered the bottom of my crock pot with some hash browns, then shredded cheese, then fresh spinach, then tomato and green chilis, and last the sausage. I repeated this step once again. I cracked 10 eggs and made sure to blend them really well and added 1/2 cup of milk to it. I poured this on top of everything added some shredded cheese and voila! It is ready to be cooked. I am going to turn it on low before I go to bed so it is nice and hot in the morning. I'm hopeful this is a winner because it sure looks like it is going to be yummy.



My two favorite cooking items

I want to start off by sharing my two most used cooking items. I LOVE LOVE LOVE them. I use both for almost everything I cook. First is my Vidalia chopper. It is amazing. Instead of wasting countless minutes hand chopping veggies it does all the work for you.
Second is Chef Paul Prudhome's blacken seasoning. We love his seasonings so much we buy them in bulk and they last forever. I also recommend his vegetable seasoning for the perfect taste with your veggies when sauteeing, baking or grilling them.
