Croissant Breakfast Casserole

For this weeks breakfast I decided to try something new. I got the pillsbury reduced fat croissant and laid it on the bottom of a 9x13 greased pan. I then spread a little bit of low fat cream cheese on top because I love cream cheese. I then grounded up some breakfast sausage and added to the top.

I whisked together 8 eggs and added a cup of milk, some spinach, tomato and green chilis. Remember when you are making breakfast casseroles you can add or leave out veggies you don't like. If you like mushrooms add them. If you don't like green chilis remove them. I just usually put in things that are in my fridge. You have plenty of options when it comes to what you want to add in or remove.
Once the eggs are whisked together I then poured this on top of the croissant and sausage. I added some shredded cheddar cheese on top and baked it on 375 for about 35 minutes. Everyone's oven is different so when you see things turning a golden brown that's usually a sign it is finished. Now I don't have to worry about cooking breakfast for the next few days. Serve with some fruit or a glass of OJ. Enjoy!
