Well I have been making these for years, but I saw another friend cook cook his chicken differently than me and I wanted to try it that way.
I decided to make BBQ and Buffalo pizzas. I diced the chicken up and a raw onion. I cooked half of the chicken and onion with BBQ sauce and the other half with Buffalo sauce. Once it was cooked through I got my pizza crust mix. Follow the instructions on the package. I have to feed 3 boys and they can eat a lot so I use 5 packages of the crust. I use my hands to kneed the dough and I add flour to my hands so it doesn't stick to my fingers as I kneed.
You will want to separate the dough to two same size balls. Next spray two pizza pans with pam and using your hands spread it evenly over the pan. I also use some flour to help smooth it all out as I kneed it across the pan. I'd definitely recommend not forgetting to use a small bit of flour.
Now its time to add the sauce and toppings. I added BBQ sauce to one spreading evenly and buffalo sauce to the other. On the BBQ I added fresh spinach, diced cherry tomatoes, banana peppers and of course mozzarella. The buffalo I just did sauce and cheese. I then added the chicken to each one and topped with some more cheese. I don't set a timer when I bake it I just wait until it begins to turn golden brown. However, you will want to cook them on 450 for roughly 10-12 minutes and then rotate them for another 10-12 minutes.
Absolutely a big hit! I like this better than buying from a pizza place and its not near as fattening or greasy.

1 pound of chicken
BBQ Sauce
Buffalo Sauce
3 cups of mozzarella
cherry tomatoes
banana peppers
spinach
pizza crust mix
We have never made homemade dough. I want to try that! The buffalo pizza looks pretty dang amazing too!!
