This was a fun one to try. I wouldn't say its as good as the broccoli and cheese at Panera, but if you are trying to make a lighter calorie version it will work. I would also like to add that you can leave the chicken, rotel and potatoes out and make it more like plain broccoli and cheese soup.
I placed a pound of chicken in the bottom of my crock pot. I added a can of low sodium chicken broth. I added a can of rotel, 3 cans of low sodium cheddar cheese soup, 2 bags of frozen chopped broccoli, a handful of mini diced carrots and 2 medium diced red potatoes.
I let it cook all night long for 8 hours. You will just want to stir it thoroughly to make sure the chicken shreds up. It was amazing!!! It made such a large amount that I put some in a freezer bag and will eat at a later date. The husband loved it too. Perfect for a busy day and a cold winter night.

Chicken
Frozen Chopped Broccoli
1 can of rotel
1 can of low sodium chicken broth
3 cans of low sodium cheddar cheese soup
carrots
red potatoes.
