I am just not a fan of beans. I have tried to eat them several times over the years and it is just not my preference. However, I love chili and I love eating something hot especially when I have a cold and it is cold outside. Today is a chili day.
First I diced 1 bell pepper, 1 white onion, and 1 jalapeno. I left the seeds in because I like it hotter. You can remove the seeds if you like. I also minced 3 garlic cloves. I added 2 tablespoons of butter and let this simmer a bit.
Next I added 2 diced tomatoes, 1 can of rotel and 1 can of petite diced tomatoes. You may not want that much tomato, but I want my chili thick.
Next I grounded 1 pound of pork sausage and added it. Please be sure to drain the grease.
Then I added 1 pound of lean hamburger meat. Again drain the grease before adding.
Now its time to add 1 jar of marinara. I used a garlic and herb, but whatever you want will do. Then the spices... 1 tablespoon chili powder, 1 tablespoon cumin, 1 tablespoon crushed red pepper and 1 teaspoon of garlic powder.
Stir well and you have some amazing, hot, thick, delicious Holly Style Chili. Yum!
