UNstuffed Bell Peppers (crock pot)

Okay I have to say I am incredibly impressed with the flavor and taste of this. This will definitely be high on my list of meals I will make again and again.

Start by adding 1.5-2 cups of cooked rice to your crock pot. I would suggest using the instant rice. It is so much easier. I used brown rice that took me forever to cook, but hey it still tasted great.


Next, add 3 diced bell peppers and 1 diced onion. I chose to add 1 diced jalapeno, but that's only for people that like extra spice. (jalapeno optional)
 Next add 1 lb of uncooked diced chicken. I topped it with 1 can of cheddar cheese, 1 can of corn (DRAIN juices), 1 can of rotel (DRAIN juices).

 Here is for the fun part. Add 1 cup of your favorite salsa. I added my homemade salsa because it is quite delicious, but any salsa will do.

 Last add your seasonings. I added taco seasoning, but some simple salt and pepper will work if desired. There is plenty of flavor in the other ingredients.
  Cook on low for 5 hours. Stir everything and serve. You can serve as is or add some shredded cheese on top, avocado slices, a side salad. The world is yours! For those that love black beans this would be a nice addition.



Ingredients:
3 bell peppers
1 lb uncooked chicken
1 can of corn (drain juices)
1 can of rotel (drain juices)
1 cup of salsa
1 can low sodium cheddar cheese 
1 small white onion
seasoning of your choice
1 jalapeno (remove seeds/optional)
recommended addition black beans (drained)
