I decided to do a different swing to Taco Tuesday. I decided to do Chicken Taco Stuffed Shells.
First I cooked my chicken in a crock pot with 1 cup of salsa. I use my homemade salsa which you can find on my blog or you can use your favorite salsa.
Once the chicken is cooked remove from the crock pot and cut or shred. I cut it up, but it ended up shredding quite a bit on its own. You can cook the chicken while you are at work hence why I used the crock pot. If you rather bake the chicken or pan cook it that is fine too.
Then I added 1 can of low sodium cheddar cheese, 1/2 cup salsa, 1 can green chilies (drained), 1 can of rotel (drained) and taco seasoning. Stir well. In the mean time you want to boil your large shells in a pot. Drain them to prepare the stuff them.
Next I pulled out a large baking pan. Instead of greasing it I added some salsa to the bottom of the pan and covered the entire pan.
Then using a spoon begin stuffing your shells. Top with shredded cheese. I chose pepper jack, but whatever cheese you like is great.
Bake on 375 for 15 minutes and then you are done.
