Beef Picadillo

I am trying to learn to make more authentic Mexican type dishes so decided to take my hand at Picadillo.

First you want to ground your beef at least half way through. Then drain to get the fat out and add back to the pan. Then you will want to thinly chop 1/2 red bell pepper, 1/2 onion and 2 small red potatoes and add to the pan and cook.


  Once they begin to soften add diced cilantro, a diced jalapeno (remove the seeds), and 2 minced garlic cloves and cook some more.
 Then add 2 cored diced tomatoes. To core the tomato I cut each end off and got a knife and cut out the inside. Add the tomatoes to the pan. Next squeeze 1 lime (juices from) in, add 1 tablespoon of cumin, 1 teaspoon of cayenne pepper and salt and pepper to taste. Then I added 1/2 cup of my favorite salsa. Stir thoroughly.

Serve on tortillas (flour or corn) or with a side of rice and beans. I served on tortillas with a side of homemade spanish rice and green sauce. 

Ingredients:
1 lb of beef
1 red bell pepper
1 onion
2 garlic cloves (minced)
1 lime
1 jalapeno (remove seeds)
cilantro
2 red potatoes
2 tomatoes
salsa
cumin
cayenne pepper
