This soup was packed full of delicious vegetables and low calorie too.
First chop up 1 lb of chicken in small chunks. Next top it with all your veggies. I added one package of fresh basil (remove the stems), 1 diced stalk of celery, 1 diced small yellow onion, 1 diced carrot, 1 garlic clove (minced).
Next, add 1 can of low sodium chicken broth, 1 can of petite diced tomatoes and 1 jar of marinara. Add 1 tablespoon of basil and 1 tablespoon of oregano or other Italian seasonings. Cook on high for 5 hours or cook on low for 8 hours.
Ingredients:
1 lb of chicken
1 package of bay leaves
1 carrot
1 stalk of celery
1 garlic clove
1 yellow onion
1 tablespoon basil
1 tablespoon oregano
1 can of low sodium chicken broth
1 can of petite diced tomatoes
1 jar of marinara
