Are you looking for a healthy dinner? If so this is where its at!
I started off by dicing up 1/2 a small onion, then chopped up a large handful of cilantro and I added 1 tablespoon of minced garlic. I always swear by using fresh ingredients, but I have been using a lot of garlic so I bought garlic that was already minced to save me a step. If you use fresh I would recommend using 2 cloves. Then I squeezed 2 limes into the pan. Instead of using butter or olive oil you are going to use the natural lime juices to saute' your shrimp.
If a little bit of the pulp from the lime gets in the mix that's even better! I used fresh shrimp instead of precooked, but if you want to use the precooked that should work as well. If you use fresh you will want to peel all of them prior.
Add the shrimp to the pan and cook for about 10 minutes stirring consistently. Both sides of the shrimp will be pink when it is done cooking.
Check my next two blog posts to find out about my homemade spanish rice and avacado cilantro dip that I paired with the shrimp. YUMMY!
Ingredients:
2 lbs of shrimp
2 limes (use the juices)
large handful of cilantro
1 teaspoon minced garlic or 2 garlic cloves
