Omelette Egg Muffins

Do you want a breakfast packed full of protein and veggies? Well this is an excellent way to meal prep for the week and do just that.

First I whisked a dozen eggs. Next I added chopped ham.


Then I added chopped fresh spinach, 1 diced roma tomato, 3 sweet peppers, and half a bell pepper and onion as well as 1 cup of milk. Stir well!


Then grease a cupcake pan and carefully pour your egg mixture into each cupcake slot.




Bake on 357 for 15-20 minutes. You will know they are done with then top is golden brown and use a toothpick to make sure the center is cook. Let cool for 10 minutes and pour them out of the pan. You can freeze and save for next week or eat on them all week.



Ingredients:
12 eggs
1 cup milk
diced spinach
1 roma tomato
3 sweet peppers
ham
1/2 bell pepper
1/2 onion
