This was fun, yummy and easy!
I diced up 1 jalapeno (removed the seeds), added 1 can of fire roasted tomatoes, 1 can of corn, 1 can of green chilies to a crock pot. I would suggest adding black beans too. I am just not a bean fan.
Next, I topped it with my homemade enchilada sauce. If you don't want to make your own a simple can of red enchilada sauce from the store will do. Then add a can of chicken broth and 1/2 cup of water. Add chicken and cook on low for 8 hours or high for 5. The chicken will fall apart as its cooking and use a fork to shred the rest.
Serve with tortillas chips, sour cream, guacamole. Whatever you prefer.
