Chicken Pepper Soup (crock pot)

I through this together kind of last minute, but it was really great. I gave some to my neighbor and she called me begging for the recipe.

I also like this because the crock pot did most of the work and it's perfect for a winter day and healthy.

Add 1 lb of chicken to the crock pot. Top with 1 diced red bell pepper, 1 diced green bell pepper, 2 diced jalapenos (remove seeds), 1 can of corn, 1 can of low sodium chicken broth, and 1/4 cup juices from pickled jalapeno  jar. Cook on low for 8 hours or high for 5. Once the chicken is falling apart then you know its cooked and ready to eat. Add some shredded cheese and diced avocado on top if desired.
